This very special and rare spice, derived from the pods of orchids, combines beautifully and simply with the faintly tart flavour of apricots, a little fresh lemon juice and unrefined cane sugar to make a classic Rosebud Apricot & Vanilla Jam, one of the most understated and delightful of preserves.
