Elderflower Cordial

Elderflower Cordial

  • Heavy based saucepan
  • Measuring jug
  • Fine greater
  • Lemon juicer
  • Large container, for steeping
  • Wooden spoon
  • Large fine sieve
  • 15 x 330ml bottles (or the equivalent of)

Ingredients

  • 1.3kg Elderflower heads (15 to 20)
  • 2.3ltr Water
  • 1kg Granulated sugar
  • 4 Lemons, juice and zest

Method

Pick 15 to 20 large elderflower heads and store in a container until needed.
Place a heavy based saucepan on a medium heat add the sugar and water and gently heat the mixture stirring continuously.

Once the sugar has fully dissolved increase the heat and bring to the boil. Add the lemon juice and zest then bring back to the boil then cook for a further 2 minutes.

Pour the liquid into a large plastic container and leave to cool naturally. When completely cold add the elderflower heads, submerging them into the liquid.

Cover and leave in the fridge 3 days turning each morning. On day three sieve the cordial using a fine sieve. Bottle immediately and store in cool dark place for up to 6 months.

Once opened keep in the fridge for up to 3 weeks.

Enjoy or over ice with apple juice and a measure of your favourite local gin.
